**Note: On April 21, 2006, USDA/AMS updated the lamb cut percentages by weight of carcass. The net carcass value weight was lowered by 0.47%. For example, with the new cut percentages, the net carcass value was $190.08/cwt. during the week of April 21. However, if the old cut percentages had been used, the net carcass value would have equaled $189.37/cwt. The new cut percentages raised the value of the cutout by 0.37%.

It is a composite value that sums the value of the respective lamb cuts multiplied by their weights. It is also the gross carcass value less processing and packaging costs.
